Homemade Super Nutty Granola

Crunchy, nutty, protein packed and delicious homemade granola that takes minutes to make.

I first made this back when I was a volunteer at this pay-as-you-wish cafe in Amsterdam called Trust. Before you go looking for it, let me give you the bad news, it doesn't exist anymore.


I was there for a few months only and yet it was an incredible experience, one that helped me grow a lot, learn a lot, laugh a lot and taste many delicious treats. Trust was much more than a cafe, it was a space for people to come together, share experiences, listen and learn from each other.


I met many wonderful and unforgettable characters during my time there, but one still holds a place in my heart. We haven't spoken or seen each other in years, yet her honesty and passion still remains in mind. Saskia, she was an ex-chef who loved to teach/share her knowledge about food and had some incredible ideas. I'm not sure if she was the one who showed me how to make this but she certainly helped me look at food in a different, more mature way.


We all had things to share, we were all dealing with our own "demons" and Trust was the safe place where we could all be 100% ourselves, be open with one another and trust that our voice was heard and we would be looked after with love and patience.


This goes out to all the incredible people I met along that path.

Crunchy, Nutty, Healthy, Protein Packed Granola

Super easy and adjustable granola to power up your breakfast.

Prep Time - 10 minutes Cooking time - 5 minutes Total Time - 15 minutes


Servings 15 - 100gr servings

Course Breakfast, Dessert, Protein Snack Cuisine Gluten-Free, Vegan Does it last? 2 weeks in airtight container

Ingredients:


  • 500gr. old fashioned oats

  • 250gr. almonds

  • 250gr. walnuts

  • 250gr. hazelnuts

  • 100gr. pumpkin seeds

  • 100gr. sunflower seeds

  • 150ml. oil - coconut for a sweeter granola, olive oil for a more savoury after taste

  • 200ml. Maple syrup or honey

  • 1/2 teaspoon cinnamon (optional)

  • a pinch of salt

Note: you can use any nuts or seeds you wish for this and experiment with adding other spices if you want.


Instructions:


  1. Preheat oven to 180*C and line 2 baking trays with

  2. If you have a food processor, add all nuts and pulse a few times to brake into smaller pieces. You can skip this if you don't have one or place nuts in clean towel and hit a few times with a rolling pin.

  3. Using a large mixing bowl, add all ingredients and mix well until oat flakes are well covered.

  4. Split between 2 baking trays, and spread out flat so that it bakes evenly and you get nice clusters of granola.

  5. For best results bake 1 tray at a time for 5-7 minutes or until golden on top.

  6. Remove from oven and let cool on the tray. Once completely cool, transfer to a clean airtight container or jar.

  7. Serve with your favourite mylk or plant-based yoghurt.
