An incredibly beautiful lemonade, full of vitamin C and antioxidants with a unique flavour that will amaze you.
We love October. It's the month of the first rainy days, golden colours in the trees, hoodies and duvets. It's also the month of pumpkins, Jerusalem artichokes and of course, pomegranates.
Mirka's dad is a lover of nature and has quite a big garden in his backyard, with lots of wonderful fruit and veggies. Every time we go there or he visits us, we end up having bags full of fresh goodies and herbs.
This time around we were lucky to receive the first batch of pomegranates from his tree. At first we wanted to just use them as topping for our salads. However, while we were at the farmers market on Friday we picked up around 20 lemons and some fresh peppermint to make lemonade, so today, as we began squeezing the lemons, we thought... Why don't we just blend the lemons together with the pomegranates and see what comes out.
It was one of the best ideas we had in a while, I have to honestly say that this is the best lemonade I've ever had.
The Yummiest Sugar-Free, Pink Lemonade

Servings 4-6 glasses

6 lemons - squeezed
2 large pomegranates - you want only the arils (seeds) *
2 dates - pitted
Fresh peppermint/mint leaves
*Our way of getting the arils out, is to cut off the top and bottom of the pomegranate and gently pull it apart so you are able to just pick out all the seeds.
Add the pomegranate arils, the lemon juice and the dates in a high speed blender and blend for 1 minute.
Using a fine strainer poor the lemonade through to remove all the seeds of the arils.
Serve in a tall glass with ice and a handful of peppermint leaves.
